Mushroom & Peanuts with Veg XO Sauce
Mushroom & Peanuts in Veg XO sauce is a quick snack enjoyed by familes. It brings together the contrasting textures and complementary flavours in perfect harmony. This recipe combines the earthy richness of mushrooms with the satisfying crunch of peanuts, all sauted in a flavourful Veg XO sauce. The Veg XO sauce is a blend of aromatic spices, herbs, and condiments, meticulously crafted to deliver a burst of umami and complexity to every mouthful. With just a handful of ingredients and a few simple steps, you can create this restaurant-style dish at home.
Ingredients
- Ginger – 5g
- Garlic – 15g
- Mushrooms – 150g
- Cornflour – 35g
- Salt – 3g
- Roasted Peanut – 20g
- Sesame Seeds – 3g
- Refined Oil – 15g
- Sugar – 3g Optional
- AWE Foods Veg XO Sauce – 60g
- Spring Onion for garnish – 10g
Method
1. Marinate the mushrooms with salt and cornflour, then deep fry and set aside.
2. Deep fry the peanuts and keep them aside.
3. Add oil to a wok. Once the oil is hot, add the chopped garlic, ginger, and sesame seeds and saute.
4. Add 𝐀𝐖𝐄 𝐅𝐨𝐨𝐝𝐬 𝐕𝐞𝐠 𝐗𝐎 𝐬𝐚𝐮𝐜𝐞 and water (optional) to make a smooth paste. Add salt and sugar to taste.
5. Now add the fried mushrooms, peanuts and toss them for 30 seconds.
6. Garnish with some fresh spring onions or cilantro and serve hot.

Substitute mushrooms with chicken or any other protein of your choice, and you can also enhance their flavor and texture by pan-frying them.
